Bodegas Bhilar is a small, family-run estate in Elvillar, Rioja Alavesa, founded by vigneron David Sampedro Gil and Melanie Hickman. Their vineyards are organically and biodynamically farmed, with dry-farming, hand work and horse-ploughing replacing chemical intervention and tractors. Certified by Eneek and Demeter, the estate also supports biodiversity through native vegetation, bees, hens and a biodynamic garden. The solar-powered, off-grid winery reflects their pursuit of balance between land and winemaking. David and Melanie focus on low-intervention, single-vineyard wines that express the limestone soils, altitude and distinct character of Elvillar, using concrete and oak to preserve freshness and add complexity. Their wider Terroir Collection also explores forgotten varieties, including Rufete from Sierra de Francia.
