Willi Schaefer

Germany

Willi Schäfer is a family-owned Mosel estate focused on steep Riesling vineyards in sites including Graacher Domprobst, Graacher Himmelreich, and Wehlener Sonnenuhr. The winery passed from founder Willi Schäfer to Christoph Schäfer and Andrea Schäfer in 2015, and the couple now lead the estate. Farming is described as sustainable and low-intervention, with no formal certification noted. In the cellar, they use native yeasts and traditional German fuder casks, reflecting a classic, hands-on approach.
