Still Waters Vineyards is a family-run estate in Paso Robles’ El Pomar District, owned by Paul and Patricia Hoover, with children and extended family involved. The estate focuses on low-yield, estate-grown fruit and a limited, handcrafted portfolio of more than 22 wines, with Paul leading winemaking decisions alongside Patricia. Its SIP Certified Vineyard status reflects a broad sustainability program: solar power, cover crops, wildlife habitats, precise irrigation, hand harvesting, and waste recycling. The gently sloping, limestone- and shale-rich site benefits from strong daily temperature swings that support gradual ripening. The estate also features gardens, a historic olive grove, and educational tastings and vineyard experiences centered on farming and winemaking.
