Chevrot et Fils is a family-owned Burgundy estate in the southern Côte de Beaune, founded in 1798 and now run by brothers Pablo and Vincent Chevrot. Its clay-limestone vineyards produce wines from 15 appellations, including estate-labeled Pinot Noir from Santenay and Maranges. The domaine has farmed organically since 2007 and has been certified since 2011, with biodynamic practices also reported. Grapes are hand-harvested, around 80% destemmed, and horses are used to plough part of the vineyards, helping limit soil compaction. The estate emphasizes soil care, controlled yields, and respect for its varied Triassic and Lower Jurassic terroirs.
