Château Lespault-Martillac is a historic Pessac-Léognan estate in Martillac, Bordeaux, on a gravelly rise with deep gravel over clay-gravel subsoils that offer strong drainage and freshness. Owned by Jean-Claude Bolleau and managed since 2009 by Olivier Bernard and the Domaine de Chevalier team, it is cultivated as a single block with old vines, notably Merlot, plus Cabernet Sauvignon, Petit Verdot, Sauvignon Blanc and Sémillon. Farming follows organic-style principles without chemical herbicides or fertilizers, using ploughing, mechanical weeding, organic compost, predator mites and pheromone mating disruption, with manual harvesting and detailed plot-by-plot sorting. Winemaking, overseen by cellar master Louis de Bouglon, emphasizes precise parcel handling and a balanced, charming style with silkiness and finesse rather than over-extraction.
