Founded in 2020 by Yves and Yoshi, O2Y is a small-scale natural wine producer now operated by Gallus (Olivier Guala-O2Y), with winemaking shared by Nicolas Boudier, Aymeric Paulet, and Olivier Guala. Originally working with biodynamic grapes from several French regions, the domaine acquired its own Jura vineyards in 2023 and is biodynamically certified. Its wines follow the O2Y = 100% ZERO approach: sulfur-free, with no added inputs and fermentation by indigenous yeasts. The estate focuses on Jura varieties including Pinot Noir, Savagnin, Poulsard, and Trousseau.
