Domaine Les Monts is a family-run estate in Fussey, in Burgundy’s Hautes-Côtes de Beaune, where the vineyard sits at 470 metres. Described as a human and peasant adventure, the domaine farms organically with an emphasis on biodiversity, ecosystem balance and resilience to drought and climate change. Its vineyards include the 5.5-hectare Les Crucibées monopole, formerly pasture for more than a century, planted on clay and Jurassic limestone marl. The estate maintains grass cover, fallow areas, tall grasses and fruit trees, while using light tillage, mechanical row management and low-dose organic treatments. High-density vines are pruned in the traditional Burgundian Guyot style and allowed to grow freely. Wines are made from Aligoté and Chardonnay, alongside Pinot Noir, with production focused mainly on whites.
