Le Cimate is a family-owned winery in Montefalco, Umbria, founded in 2011 by Paolo Bartoloni and rooted in the Bartoloni family’s agricultural tradition, which dates to the 1800s. Three generations contributed to its development, combining respect for tradition with modern cellar technology. Paolo Bartoloni manages the estate, whose wines are made exclusively from estate-grown grapes. The range focuses on Montefalco’s reds, particularly Sagrantino, alongside Trebbiano Spoletino and other regional wines. The winery also produces extra-virgin olive oil from manually harvested grapes, cold-extracted within 10 hours. Visitors can tour the clean, technologically equipped cellar and taste the wines and oil with guided explanations of the production process.
