Canopus is a Mendoza estate in El Cepillo, Uco Valley, founded in 2010 by Gabriel Dvoskin after experience in Burgundy and Friuli. Dvoskin owns the project and personally oversees both the vineyards and the winemaking. The estate’s high-altitude vineyards, around 1,000 meters, are rooted in sandy-clay soils over limestone and other calcareous soils. Farming is regenerative and biodynamic in approach, with organic certification since the mid-2010s and biodynamic certification in progress. In the cellar, Canopus follows a low-intervention philosophy, working with neutral vessels such as concrete, used barrels, and amphorae, with occasional whole-cluster fermentations.
