Domaine Cailhol Gautran

France

Domaine Cailhol Gautran is a family-run estate in Aigues-Vives, in the Minervois of Languedoc-Roussillon, making wine for five generations. Its organically certified vineyards lie around the domaine on south-facing limestone plateaus in the foothills of the Massif Central. The estate works with Mediterranean varieties and vinifies each parcel separately for precision. Its approach is deliberately low-intervention, avoiding chemical treatments and allowing wildlife to flourish among the vines. All reds are made without added sulfites, while whites and rosés receive only a minimal addition before bottling. Wines are matured in stainless-steel tanks, oak barrels and, since 2014, terracotta jars.
