Scarbolo is a family-run winery based in Lauzacco in Friuli-Venezia Giulia, led by Valter Scarbolo, with Mattia Scarbolo managing operations and Lara Scarbolo as winemaker. The estate emphasizes artisanal, low-intervention viticulture rooted in devotion to the Grave and to Pinot Grigio. Farming is certified sustainable, with vegan wines, hand harvesting, cover crops and green manure, careful pruning, biodiversity planting, and reduced irrigation and copper use. In the cellar, Scarbolo favors gentle handling and minimal intervention, including soft pressing, stainless steel and French oak aging, no bâtonnage, and limited sulfur. The focus is on expressing terroir and the character of each vineyard with patience, precision, and holistic care.
