Stefan and Katja Vetter run a small natural wine estate in Gambach, Franken, working old, steep terraces in the Gambacher Kalbenstein nature reserve. Their biologically certified vineyards are cultivated by hand, without herbicides and with minimal copper and sulfur. Sylvaner is the central focus, complemented by Müller-Thurgau, Riesling and Spätburgunder from parcels spanning Franconia’s varied geological formations. Wines are made with minimal intervention: native-yeast fermentation, malolactic fermentation and aging in used wooden casks, with no fining or filtration and only minimal sulfur at bottling. The Vetters prioritize freshness, tension, elegance and liveliness over ripeness or overt fruitiness, seeking balanced, terroir-driven wines from old vines and poor soils.
