Technical details

Producer

Samuel Billaud

France

Samuel Billaud is an independent, family-owned producer in Chablis, Burgundy, founded after Samuel’s long career at his family’s historic estate. A member of a renowned Chablis winegrowing family, he is known for precise, mineral Chardonnay and a deep understanding of the region’s terroirs. Based in the heart of Chablis, with cellars dating to the 13th century, he farms estate vineyards on Kimmeridgian clay-limestone soils using lutte raisonnée and organic-minded methods, with hand harvesting and close attention to soil health and biodiversity. In the cellar, he adapts élevage by parcel, combining tank, large formats, and selective 450L barrels, with gravity-fed handling and restrained oak to preserve freshness, tension, and site expression.
