Provolo is a fourth-generation, family-run winery in the Valle di Mezzane near Verona, producing wines since 1927. Its organically managed, non-irrigated vineyards are tended with careful manual work, temporary grass cover, organic fertilization and low-impact disease control, with selective hand harvesting based on ripeness. In the cellar, traditional methods are supported by technology that monitors natural processes, while sustainable cleaning, packaging and energy choices reduce environmental impact. The family seeks balanced, complex and long-lived wines that express the territory without excessive intervention, sometimes foregoing premium cuvées in difficult vintages. Its Gadoi line takes this approach further, with wines made without added sulfites.
