Celler Pardas is an estate-run producer in Alt Penedès, founded and owned by oenologists Ramon Parera and Jordi Arnan, who live on the property and manage it as a holistic forest-vineyard system. Based at Can Comas in Penedès, the estate includes vineyards alongside Mediterranean forest and pasture, with clay-limestone soils over petrocalcic rock. The vineyards are certified organic and farmed with biodynamic principles: dry-farmed, with no irrigation, no ploughing, ground cover kept for biodiversity, and no synthetic chemicals or pesticides. Native varieties including Xarel-lo, Sumoll and Malvasía are grown here. In the cellar, Parera and Arnan follow a low-intervention approach with native yeasts, spontaneous fermentations, and minimal additives, using steel, concrete and oak. They are also members of the EU-registered Corpinnat collective.
