Joseph Jefferies is a family-owned natural-wine producer based in Caux, Languedoc-Roussillon, run by Joe Jefferies and his wife. Working from a modest village space, the domaine makes small-batch wines from vineyards planted on basalt-rich soils formed by an ancient lava flow. The approach emphasizes early harvesting, fermentation in fiberglass tanks, and zero additives, with no fining or filtering. The volcanic terroir is expressed in lightly tannic reds and rich, herbaceous, densely textured whites.
