Domaine Ilarria

France

Domaine Ilarria is a family-owned estate in Irouleguy in France’s Sud-Ouest, held by the Espil family for several centuries and today run by owner-winemaker Peio Espil. Its vineyards lie on the steep Pyrenean slopes of Irouleguy and are worked by hand. Certified organic for 15 years, the domaine farms with compost fertilisation, minimal sulfur and copper, natural grass cover maintained by mowing, and sheep grazing in autumn. In the cellar, it follows a low-intervention approach with native yeast fermentations and without chaptalisation or de-acidification. The focus is on terroir-driven red and white wines shaped by organic farming and careful, minimal handling.
