Monastero Suore Cistercensi S.O. (Trappiste) is a self-sustaining Cistercian monastery in Vitorchiano, Lazio, where the nuns farm organically and have followed biological agriculture since 1993. The vineyards are worked directly by the sisters using only sulfur and copper, with permanent grass cover and hand harvesting, on volcanic soils. In the cellar, the wines are made with native yeasts, without synthetic chemicals or forced stabilization, and are left unfined and unfiltered in a minimal-intervention style. Consulting winemaker Giampiero Bea supports the winemaking and commercial direction. Alongside wine, the monastery also produces other artisanal goods such as honey, oil, jams, and liqueurs.
