France

J. Thorin is a Beaujolais producer making Beaujolais-Villages from Gamay Noir. The grapes are harvested by hand and vinified in gravity-fed concrete tanks, with ten days of whole-berry maceration, pumping over and delestage, followed by aging on fine lees. Its vineyards extend across Beaujolais, including steep slopes at 200–400 metres, with Gamay representing 98% of the planted area. The wines reflect a traditional, hands-on approach focused on careful extraction and élevage.
