Finca San Blas is a small artisanal estate winery in Requena, Valencia, working 18 hectares of Cava DO vineyards divided among numerous parcels. The estate follows sustainable and ecological farming, officially certified from the 2022 vintage. As Valencia’s first recognised “Elaborador Integral,” it completes Cava production and ageing on site. Its first Cava was an organic Extra Brut made from Xarel·lo and Chardonnay, aged 15 months on lees. The winery follows a traditional French château approach adapted to the region: grapes are hand-harvested into 10 kg boxes, carefully sorted, and gravity-fed into vats. Antonio Zahonero manages the estate, with Toni Zahonero and his team overseeing operations.
