Domaine du Mortier

France

Domaine du Mortier is a family estate in Saint-Nicolas-de-Bourgueil in the Loire Valley, founded in 1996 by brothers Cyril and Fabien Boisard, who continue to own and manage the domaine. Farming has been certified organic since 1999 and biodynamic since 2007, with no synthetic chemicals used and an emphasis on maintaining a balanced vineyard ecosystem. Harvesting is by hand, with sorting before fermentation. In the cellar, the approach is natural and low-intervention: no added yeast, enzymes, or tannins, and sulfur is used sparingly or sometimes not at all. The estate also includes parcels in Bourgueil and an experimental agroforestry site in Brain-sur-Allonnes.
