Domaine du Couvent

France

Domaine du Couvent is a small family-run estate in Burgundy’s Côte de Nuits, owned and operated by father-and-son winemakers Philippe and Paul Chéron. Formerly known as Domaine des Varoilles, the domaine works its vineyards with a low-yield, low-intervention approach, including whole-cluster fermentation, limited oak and no sulphur at pressing. Its wines reflect a hands-on style focused on restrained cellar intervention, while the estate holds no formal sustainability certification.
