Bouchot is a small, 10-hectare family estate in Pouilly-Fumé, founded in 1966 and now owned and run by winemaker Antoine Gouffier, who acquired it in 2018. It was the first producer in the appellation to achieve organic certification (2009) and has since earned biodynamic Demeter certification (from the 2021 vintage). Vines average 45 years old, planted mainly on Kimmeridgian marl soils. Winemaking follows a minimal-intervention philosophy, using indigenous yeasts, stainless-steel fermentation, limited oak, low sulfur, and no filtration.
