Domaine Chavy-Chouet is a Burgundy estate managed by Romaric Chavy, representing the seventh generation of the family. The domaine farms 15 hectares of vines across 14 appellations, including Meursault, Puligny-Montrachet, Saint-Aubin, Volnay, and Pommard. Viticulture is attentive, with up to 12 passes per vine each year, using only sulfur and copper as inputs. The winery combines traditional and modern facilities, with 800m² of cellars, focusing on gravity-fed operations, minimalist intervention, and impeccable cleanliness to produce pure, balanced, and energetic wines.
