Denny Bini is an independent, owner-operated producer in Emilia-Romagna focused on natural sparkling wines. Based in the Reggio Emilia area, he farms certified organic vineyards under ICEA certification, working both his own parcels and fruit from neighboring certified organic sites on marl, sand, and sedimentary clay soils. Bini is both owner and winemaker, and his approach emphasizes native yeasts, natural temperature-uncontrolled fermentations, and traditional sparkling methods including metodo ancestrale and Charmat. Formerly a historic cellar-master, he now runs his own estate and cellar, contributing to the region’s natural-wine revival.
