Château Doyac is a family-owned Cru Bourgeois estate in Saint-Seurin de Cadourne, in the northern Haut-Médoc. Acquired by Max de Pourtalès in 1998, it farms clay-limestone vineyards organically and biodynamically, with Demeter certification. The estate is known for an unusually high proportion of Merlot for the Médoc, producing wines that emphasize balance, freshness, precision and elegance rather than extraction. Fermentation uses indigenous yeasts, with minimal inputs and sulfur correction permitted during vinification. Aging combines barrels and increasingly amphorae. Max de Pourtalès works with consulting oenologists Eric Boissenot and Marco Balsimelli to adapt blends to each vintage and express the property’s character.
