Cantina Cenci is a fourth-generation family winery in Umbria, based in an ancient Olivetan monastery dating to 1687. Under Giovanni Cenci, the family farms organically and agroecologically, without chemical treatments, using hand-harvested grapes from its own vineyards. Winemaking combines traditional methods with spontaneous, plot-by-plot fermentations and low sulfur, producing certified-organic wines with a clear sense of place. Clay-sandy, limestone-rich soils and travertine contribute notable sapidity, while a small vineyard lake creates a distinctive microclimate and wildlife reserve. The winery sells exclusively direct to consumers, offering original wines with artist-designed labels—some featuring Giovanni’s sculptures made from repaired agricultural tools—and shares data from its vineyard weather station to support low-impact farming.
