Saltare is a boutique South African producer based in Stellenbosch, led by owner-winemaker Carla Pauw, who has dedicated herself to the project since 2010. Established in 2007, it focuses on small-scale Méthode Cap Classique sparkling wines, with grapes sourced from selected vineyards across the Western Cape, including Robertson, Stellenbosch, Paardeberg and Swartland. Saltare seeks pure, clean flavours and minimal dosage, allowing the wines time to develop roundness and wholeness. Its low-impact approach includes biodynamic principles, gravity-fed transfers, minimal pumping and wooden barrels used for balance rather than flavour. Alongside Cap Classique, the producer makes selected still wines, including Old Vines Chenin Blanc and Syrah.
