Producer

Apricus Hill

Australia

Apricus Hill is a small-batch producer in South Australia’s Adelaide Hills. Its Pinot Noir is fermented in small batches with twice-daily cap plunging, then aged on lees for 10 months in a combination of new and second-fill French oak barrels. Bottled unfined and unfiltered, the wine reflects a hands-on approach focused on subtle complexity and limited production.
