2021 · Chardonnay Arbois Blanc

Founded in 2007 by Elise and Emeric Foléat, Vignerons Les Matheny is a small Jura domaine based in Arbois and run from a traditional converted farmhouse cellar. Its vines average 45 years old and are cultivated without synthetic chemicals, with minimal sulfur used only when necessary. Winemaker Emeric Foléat vinifies parcels separately and blends them, following a natural, low-intervention approach: spontaneous fermentations, no chaptalisation, acidification, or added fining, and naturally occurring malolactic fermentation in barrel.
