Lucie Thiéblemont is a small, family-run Burgundy domaine producing Crémant de Bourgogne from a Pinot Noir vineyard between Tonnerre and Molosmes. The south- and south-east-facing vines grow on Kimmeridgian soils, similar to those of Chablis, in a climate influenced by Champagne, where Lucie grew up. She farms traditionally, without stated organic or biodynamic certification. Her Blanc de Noirs is made from 100% Pinot Fin, an ancient Pinot Noir clone, with natural yeasts, no added sulphur and zero dosage. The base wine spends a year fermenting in stainless steel before traditional-method secondary fermentation, resulting in a wine focused on natural fruit expression and minerality.
