Hillick & Hobbs

United States

Founded in 2013 by Napa winemaker Paul Hobbs, Hillick & Hobbs is a boutique estate on the southeastern shore of Seneca Lake in New York’s Finger Lakes. The family-owned project, with David Hobbs involved in site development and operations, revives the Hobbs family’s grape-growing legacy and is dedicated to estate-grown Riesling. Vines are planted at high density on steep, labor-intensive slopes of predominantly hard slate, with the lake moderating the climate. The estate emphasizes site-specific wines with purity, energy, balance, vibrant acidity, minerality, and aging potential. Its limited-production range focuses on dry Rieslings, alongside barrel-fermented and late-harvest expressions. The winery also describes farming without herbicides, using mowing, native yeast, and biodiversity to support its focus on terroir.
