Les Panseillots

Domaine des Caves du Prieuré is a small family-run estate in Crézancy, around 7 km from Sancerre, owned and operated by Gilles Guillerault, son of the original founders, and winemaker Sébastien Fargette. The estate cultivates Sauvignon Blanc on limestone-rich soils and has been transitioning to organic farming since 2019, avoiding insecticides and maintaining spontaneous grass and native flora between the vines. Its limited-production Sancerre is made with thermo-regulated fermentation, brief skin contact, and no oak aging, emphasizing a clear expression of the vineyard and region.
