Domaine de Courbissac is a privately owned estate in the Minervois near Cesseras, on the foothills of the Montagne Noire. Founded by German film producer Reinhard Brundig in 2002 and managed technically by winemaker Brunnhilde Claux since 2013, it farms biodynamically and organically, with old vines planted on varied clay-limestone, gravel, sandstone and schist soils. The estate focuses on native varieties and parcel-specific wines across red, white, rosé and orange styles. Winemaking is deliberately low-intervention, using natural yeasts, whole-cluster fermentations in concrete and open-top wooden fermenters, sober élevage and only a small addition of sulfur before bottling. The resulting wines aim for purity, elegance and an honest expression of the Mediterranean Minervois terroir.
