Ad Hoc is the accessible, casual varietal range from the family-owned Cherubino portfolio in Western Australia. Built on decades of vineyard knowledge, it sources each grape from the region best suited to it, including Margaret River, Pemberton, Frankland River and Great Southern, with a clear focus on provenance and fruit expression. The broader Cherubino philosophy is vineyard-led and farm-focused, aiming for wines of depth, purity and regional character, often with restrained oak and a hands-off approach where appropriate. Sustainability is central to the estate’s farming, with organic and biodynamic fertilisers, mulching, biodiversity measures, water-efficiency practices and a long-running push toward carbon neutrality.
