Ramiro Ibáñez is an independent producer in Sanlúcar, Jerez, working under the boutique Cota 45 label. He focuses on artisanal Sherry and table wines, with an emphasis on reviving forgotten Andalusian grape varieties and using pre-industrial methods. His farming centers on old-vine preservation, horse-ploughed ridges to capture rain, and traditional vara y pulgar cane pruning, without formal organic or biodynamic certification. A key site is the Las Vegas plot in Pago de Carrascal, planted to old Palomino clones on moisture-retentive albariza Lentejuelas soils. Ibáñez leads the winemaking with support from enologist Estefanía and is also associated with the “new Jerez” movement through his collaboration with Willy Perez.
