Quinta de la Quietud is a small, owner-run estate in Toro, Zamora, founded by Eusebio Sacristán Mena in 1999. It cultivates its own old-vine Tinta de Toro in bush vines, dry-farmed and worked partly with horses, with organic certification since 2002. The estate’s winemaking extends this hands-off philosophy through spontaneous native-yeast fermentations, no added sulfur, and respect for natural balances and maturation times. Bordeaux-trained winemaker Jean-François Hébrard leads the translation of the vineyard’s character into wine. Set in Toro’s extreme, arid continental climate, the vineyards grow in sandy soils with surface pebbles and deeper reserves. The wines are made under the Toro DO.
