France
Domaine Philippe Chavy is a family-owned Burgundy estate, with the Chavy family retaining ownership and Philippe Chavy directing the domaine since succeeding his father in 2002. Its vineyards are worked without herbicides or insecticides, using ploughing and lunar-calendar timing, reflecting a stated respect for nature; no formal sustainability certification is reported. Grapes are hand-harvested and pressed pneumatically, then fermented in temperature-controlled stainless steel before 11 months of oak aging with lees stirring. The domaine farms approximately 7–8 hectares across 30 parcels and 14 appellations, producing around 24,500 bottles annually.
