Château de Jau is a Dauré family estate in the Agly Valley of Roussillon, with roots reaching back to the 12th century. Its vineyards, surrounded by preserved garrigue, lie on schistous marl, clay-limestone and limestone soils and benefit from the Tramontane, maritime influence and cooling sea air. Certified organic, the estate supports biodiversity through cover crops, sheep grazing, hedges, trees, nest boxes and beehives, while producing honey with local beekeepers. Bernard and Jean Dauré manage the cellar, where wines are generally matured in vats to preserve fruit character, with some cuvées also seeing fine-lees ageing in barrel. Family passion extends beyond wine to contemporary art, with a foundation and annual summer exhibitions, as well as the long-established Le Grill restaurant.
