Getariako Txakolina is a protected origin, not simply a serving style. Hondarrabi Zuri leads the white-wine story, while Hondarrabi Beltza brings a red-grape dimension. Many familiar whites are young and gently spritzy, but that light retained gas does not make every bottle sparkling wine.
