Jerez wine country in southwestern Andalucía is an invitation to explore flavour beyond ordinary table wine. Around Jerez de la Frontera, Sanlúcar de Barrameda and the wider Marco de Jerez, chalk-rich albariza vineyards and distinctive cellar traditions give rise to an extraordinary range. Palomino leads the dry wines: Fino and Manzanilla develop under flor, the veil of yeast in the cask, while Oloroso follows an oxidative path and Amontillado combines both kinds of ageing. Pedro Ximénez and Moscatel reveal naturally sweet expressions, and Cream belongs to a separate sweetened style. Manzanilla’s ageing origin is specifically Sanlúcar. The familiar Sherry Triangle tells part of a larger regional story; newer rules extend Sherry ageing beyond its three historic towns. Choose the named style first, because colour alone does not tell you whether a Sherry is dry or sweet.
