Hilltops combines savoury Cabernet and spicy Shiraz with a growing range of Italian grape varieties.
Savoury berry fruit with a rounded, structured palate.
Cherry-like fruit, savoury detail and mellow tannins.
Warm summer days, cooler nights and elevated, well-drained sites shape Hilltops wine growing. Cabernet Sauvignon and Shiraz established its reputation, while Sangiovese, Nebbiolo, Pinot Gris and Glera offer other directions to explore. Granite and basalt-derived soils form part of the local landscape. Hilltops is a distinct GI from Canberra District, even when a producer works with fruit from both regions.
