Sussex Sparkling is an expression of the Sussex PDO, rather than a second independent appellation beside Sussex. Chardonnay, Pinot Noir and Meunier are familiar grapes, with other permitted varieties subject to the specification. Bottle fermentation and a minimum 15 months in bottle, including at least 12 months on the lees, help shape the wine’s texture and complexity. Sussex PDO also covers still wine under separate requirements, so the sparkling wording tells you which part of that broader identity the bottle expresses.
