Montilla-Moriles reveals Pedro Ximénez’s versatility, from dry flor-aged fino to intensely sweet sun-dried wines.
Dry and delicate, with almond and yeast notes from biological ageing beneath flor; a savoury counterpoint to the grape’s sweet expressions.
Concentrated sweetness with raisin and dried-fruit flavours from sun-dried grapes; ageing can add further depth.
Pedro Ximénez is a grape name, not a guarantee of sweetness. In Montilla-Moriles it makes dry fino aged beneath flor as well as concentrated sweet wine from dried grapes. Fino can reach its strength through fermentation without fortification; other wines may be fortified. Amontillado and oloroso offer further ageing paths. These wines have their own protected origin and should not be treated as Sherry from Jerez.
