Chardonnay.
Apple and citrus with a fresh finish, sometimes softened by lees or barrel texture.
Cabernet Franc.
Berry fruit, herbs and spice; drying some grapes can bring richer texture and more concentrated fruit.
Sandy soils, gentle slopes and a long agricultural history support this emerging Ontario wine area. Local vineyards and wines made from fruit sourced elsewhere both appear in winery portfolios. Explore Chardonnay and Cabernet Franc expressions through the stated grape origin. Some Norfolk producers use dried grapes for added concentration; that method does not automatically make a wine sweet.
