Tokaj brings together lively dry whites, dry and sweet Szamorodni, noble-rot Aszú and rare Eszencia.
Lively acidity with apple, pear and citrus notes; vessel choice and lees ageing can bring a fuller texture.
A more fragrant white route, often with floral and linden-like notes, while retaining a fresh structure.
Furmint, Hárslevelű.
Concentrated sweetness and acidity with dried-fruit and honeyed complexity from noble-rot berries; this is a representative blend rather than a compulsory pair.
Furmint, Hárslevelű.
A dry, mature white expression with developed fruit and nutty ageing notes; it differs from both sweet Szamorodni and Aszú.
Furmint and Hárslevelű are central to Tokaj, but the origin is not synonymous with sweet wine. Dry whites sit alongside several distinct sweet traditions. Szamorodni uses bunches containing both healthy and botrytised berries and can finish dry or sweet. Aszú uses selected noble-rot berries macerated in must or wine; Eszencia comes from their free-run juice. These are different methods, not interchangeable quality ranks. This guide covers Hungarian Tokaj rather than the separately regulated Slovak origin.
