Producer

Willi Opitz

Austria

Willi Opitz is a family-owned estate in Illmitz, Burgenland, founded and led by former mechanical engineer turned winemaker Willi Opitz, with his wife Maria involved. The winery relocated to Illmitz in 1997 and combines wine production with an on-site guest house and restaurant. Opitz is particularly known for his natural Schilfwein, made by air-drying grapes on reed mats, a traditional process that produces low volumes. The estate makes around 30 wines and has also developed special ranges with partners including McLaren. No formal sustainability certification is mentioned.
