Grawü

Italy

Grawü is a family project in South Tyrol founded by Dominic Grasselli and Leila Würth, producing natural wines that express the grape, alpine terroir and each vintage. Working with leased vineyards around Merano and small growers from Trento to Bolzano, they develop vineyard strategies with their partners and select only excellent fruit. Their cellar approach combines traditional craftsmanship with experimentation: spontaneous fermentation, extended skin contact, long ageing in large wooden barrels, and bottling without fining or filtration. They use no pure yeasts or other oenological products, adding only limited sulphur for preservation. Dominic Würth brings experience from Bordeaux, Montalcino, Graubünden and the Marche, while the wines focus on varieties including Gewürztraminer, Sauvignon Blanc and PIWIS. The result is uncompromising, handmade wine with substance and lightness.
