Cota 45 is an independent, founder-owned producer in Jerez, established in 2012 by Ramiro Ibáñez, who oversees the project and all winemaking. Working with old Palomino vines from pagos including Carrascal, Miraflores, Maina and El Reventón on white albariza soils, the estate focuses on unfortified wines with a distinctly artisanal approach. Farming is managed under Lutte Raisonnée low-input practices and is noted as organic and biodynamic certified. In the cellar, Ibáñez uses hand harvesting, spontaneous fermentation in old botas and extended flor ageing. He also collaborates with Bodegas Luis Perez.
