Saura is a small-scale producer based at Finca Las Cabras in Caravaca de la Cruz, within the D.O.P. Bullas. Its Viñedos de Utopía project, begun in 2015, works with Monastrell and Garnacha fina planted on terraced plots in the Sierra de las Cabras. The vines are dry-farmed, head-trained and cultivated organically and naturally, within a larger wild estate valued for its fauna and native vegetation. Harvesting is manual, with grapes selected and quickly transported to the winery. Traditional winemaking combines destemmed and whole clusters, fermentation in limestone deposits, short maceration and aging in French oak foudres. The wines are bottled unfiltered, aiming to express the landscape through fresh, acidic, moderately alcoholic and fleshy wines.
